A Delicious Beginning to the Week

In honor of the beginning of the second week of November - where has the time gone, and are we really already in November?! - and of course to celebrate the birth of AWOL's little guy :), I thought I would post a delicious and simple recipe. It is perfectly suited for a crowd, but I guarantee that it will also be gobbled up by your nearest and dearest if you leave it sitting around the house for a couple of days :)

Cheesecake Sopapilla Bars

Base:
2 8 oz. packages of cream cheese, softened
2 packages of crescent rolls
1 cup sugar
1 teaspoon vanilla extract

Grease a 13 x 9" pan and unroll both packages of crescent rolls into the bottom of the pan - press the seams together if needed.

Whip cream cheese, sugar, and vanilla and spread over the rolls.

Topping:
1 cup of sugar
2 tsp. cinnamon
1 stick of butter, melted

Mix butter and sugar and pour over the base. Sprinkle with cinnamon.

Bake at 350 degrees for 35 minutes. Enjoy!!

YummY! These sound so good...hubby needs to take treats to work tomorrow...I think these will be perfect!

Also, have you seen the rolls of crescent dough that aren't perforated into sections? It's just one large sheet. I guess the Pilsbury people finally caught on to how many people take the triangles and press them all together for a seamless sheet. How nice of them! Very handy :)

Yes, I meant to mention those Pillsbury "recipe creations" rolls - they are seamless and make the recipe a bit easier to work with. Thanks for the tip!

They sound really good! Just one quick question so you just spread the cream cheese mixture over the top w/o covering it with the crescent rolls? Sorry just a little confused.
