3 cups of kamut cereal
1 cup of rolled oats
1/2 cup of roasted almonds, chopped
1/2 cup of dried fruit, chopped
1/2 c. of peanut butter
1/2 c. of honey
1 tsp. of vanilla
*Ghirardelli chocolate chips to taste (optional)
In a bowl, mix together the kamut, oats, almonds, and dried fruit.
Meanwhile, in a small saucepan heat peanut butter, honey, and vanilla, just short of boiling.
Pour peanut butter mixture over dry ingredients and stir to coat. Add in chocolate chips if desired). Pour into a greased 9x9" pan.
Press down as firmly as you can with wax paper.
I like to put the bars in the freezer for about 2 hours, and then store in the refrigerator. This makes them firmer and easier to cut into neat squares.
*If you don't need to be dairy-free, you could use any type of chocolate chips.
